Glucose oxidase:
- Oxidizes β-D-glucopyranose to gluconic acid and hydrogen peroxide,
- Aggregates gluten-forming proteins by oxidizing sulfhydryl groups (–SH) to a disulfide bond (S–S),
- Increases the ability to retain gases in the dough.
Glucose oxidase is a naturally occurring enzyme that catalyzes the oxidation of glucose into gluconic acid and hydrogen peroxide. Due to its unique ability to convert glucose, glucose oxidase has found widespread use in many industries, including the baking industry.
